Breakfast Burrito

  • 15g Old Bay Seasoning
  • 50ml oil
  • 1 red onion, diced
  • 3 red peppers, diced
  • 300g black beans, drained and rinsed
  • 20 eggs, beaten
  • 20g butter
  • 10 tortillas
  • 100ml sour cream
  • 100ml salsa
  • 2 avocados, sliced


  1. Heat the oil in a large pan over a medium heat. Cook the onions and peppers until soft and charred (about 8 minutes). Add the black beans, and Old Bay Seasoning and cook for a further 3 minutes until warmed through.
  2. Melt the butter in a pan and gently cook the beaten eggs until they are soft scrambled eggs.
  3. Spread each tortilla with a spoonful of sour cream and salsa, then a spoon of the black bean mixture and top with scrambled egg and sliced avocado.
  4. Roll up burrito style.
